We enjoyed fajitas for our mid-week dinner! Here is what I prepared:
Green pepper, yellow pepper, and white onion hot salsa
Simply minced in a chopper, and gently sauted in a frying pan with salt, pepper & garlic salt
Chicken strips
Shallow-fried in minimum oil, with salt & pepper
Roughly chopped tomatoes
Shop-bought mild salsa
Grated Cheddar cheese
Mayonnaise (for hubby)
And you can't forget the warm soft flour tortillas!
Briefly microwaved for 30 seconds to warm through
Easy peasy and fun! If making this for guests, I'll also bake potato wedges and serve with fresh sour cream. Or maybe serve with Mexican-spiced rice?
